Old Fashion recipe for Pineapple Cream Cheese Pie
As soon as I posted this recipe on my website time I started getting messages from readers how they had enjoyed this year circulated and could not find the recipe. There is nothing as wonderful as the search for a recipe that you remember from childhood or the "return when they were first married, so I wanted to share this recipe with readers now in case you want to make this cake for any of their holiday celebrations. Perhaps this recipe go back in time, too.
PINEAPPLE CREAM CHEESE PIE
This is a recipe for an old cookbook from the United States northeast.
A 9-inch unbaked pie crust
Fruit layer:
1 / 3 cup sugar
1 tablespoon cornstarch
1 (8 ounce) can crushed pineapple in its own juice
In a small saucepan, combine sugar, cornstarch, and pineapple (not drained). Cook mixture over medium heat stirring constantly until mixture is thickened and clear. Set aside and allow to cool.
When cooled, spread the mixture on the bottom of the unbaked pie crust.
Cream cheese layer:
1 package (8 ounces) cream cheese, softened at room temperature
1 / 2 cup sugar
1 teaspoon salt
2 eggs
1 / 2 cup milk
1 / 2 teaspoon vanilla
1 / 4 cup chopped walnuts
Mix cream cheese, sugar and salt in a bowl. Add eggs, one at a time, beating after each. Mix in milk and vanilla. (It's okay if mixture looks curdled.) Pour the mixture over the pineapple layer in the crust. Sprinkle chopped nuts over all. Bake at 400 degrees for 10 minutes. Lower heat to 325 degrees bake for 50 minutes. Cool before cutting.
